cookWelcome to the Low-Carb Chef web site. If by chance you found this site, and are wondering what sort of person has the audacity of putting their personal cookbook and health story on the Internet, then that's me. In July of 2007, I weighed a crushing 290 pounds and found remarkable diet that helped me lose 80 pounds by eating a healthy carbs and healthy fats. The Low-carb Chef is my personal web site and it's devoted to helping others improve their health and helping them find ways to make healthful eating a pleasure.

First off, I am not a chef who has official training nor have I been a lifelong great cook. I just discovered food is not the enemy, just certain foods. As of today, I have lost an incredible 80 pounds while my husband has lost a 70 pounds eating low-carb meals. Low-carb eating worked for me, I hope it works for you. I still have more pounds to lose and struggle every day to continue loosing weight. I am constantly battling the pounds just as much as you.

Before you put any credence in the advice made on this web site, please read some research I've gathered on why this diet works. One Study conducted by The National Institute of Health in 2005 was pivotal in helping me understand why I tend to gain weight. Their study was to determine the most effective diet for people who have different insulin sensitivity. Subjects who were Insulin Resistant or pre-diabetic lost twice as much weight eating low-carb diets compared to dieters who used the low fat diet, even when all test subjects reduced their diets by 400 calories.

Is this the only right diet for everyone? NO! But it is effective for anyone who is insulin resistant or pre-diabetic! I believe so. My husband and I together have lost a combined total of 150 pounds following a healthy fat and low carbohydrate diet. This success has motivated me to create this web site and share what I learned. I hope it is a help to anyone out there who is likewise tired of being fat and wants to change.

The plan also recommends at least of 30 minutes of walking per day and light free weights to build muscle. If your are looking for a do-it-yourself solution, not obesity surgery, then this site should help. The low-carb chef site is a work in progress. I continue to search for recipes and test them to determine if they are to become part of my new lifestyle. I have crafted recipes from old family favorites and experimented with new ingredients. My husband and I have been shocked to find out that foods taste better than anything we have eaten before. It's worth the effort to practice the cooking arts if it means better health and more enjoyment in life. I may not be a real chef but I have become a chef in my own home.
