Cinnamon Hot Chocolate
Level One
Cinnamon has been shown to make cells more insulin sensitive which helps fight diabetes. Dark Chocolate is loaded with antioxidants. This cocoa recipe combines these two super foods.
1 1/2 oz unsweetened chocolate
1/4 cup Splenda, granular
1 tsp. ground cinnamon
3/4 cup water
2 cups milk, Hood Calorie Countdown milk
Cool Whip Elite or Cool Whip Free topping
In a saucepan, mix chocolate, suxgar, coffee, cinnamon and water. Heat until chocolate is melted and mixture is smooth. Stir constantly. Simmer for about 4 minutes, while stirring. Add milk and heat through without boiling.
Remove from heat and whisk until foamy. Serve with a dollop of whipped cream.
Chocolate Syrup
Calorie Countdown Milk can be flavored with this chocolate syrup.
8 ounces of MIlk equals 3 carbs. Fibersure adds 60 grams fiber to the syrup. Use 1 Tbs. syrup per glass of milk.
2 cups water
3 cups granular Splenda
4 Tbs. Thick N Thin, Not Sugar
1/4 cup fibersure
1/2 cup Hershey's Dark Cocoa powder
Pour water into a heavy sauce pan. Add Splenda and dark cocoa powder and bring the water to a simmer. Stir constantly for two minutes or until the cocoa is thoroughly incorporated. Allow te mixture to cool. Add the Thick N Thin, Not Sugar and the Fibersure. Whisk until the mixture is blended smooth. Refrigerate
(Syrup equals approximately 2-3 grams fiber per tablespoon of the syrup)
Eggnog
Level One
1 1/2 cups egg substitute
¼ cup Splenda
2 tablespoons vanilla
3 cups fat-free half-and-half
1 tablespoon brandy extract
Nutmeg
- Pour 1 1/2 cups egg substitute into a bowl. Add artificial sweetener and mix on medium speed until light and fluffy. Gradually blend in vanilla, evaporated skim milk, fat-free half-and-half, and brandy extract.
- Chill for 24 hours to allow flavors to blend. To serve, stir well and sprinkle with nutmeg.
This recipe should yield six servings.
