Diet Journey

Twenty years ago, my husband gave me the scariest week of my life when at age 39 he suffered a heart attack, He was found slumped on the floor, alone in his office and the emergency squad was called. I received a phone call and drove to the hospital. When I arrived, I found out that George had gone into full cardiac arrest and had to be defibralated.The attending emergency room physician said, "Ha, you're lucky he's still here." Two weeks sitting and worrying in the hospital gave me lots of time to think. Our daughters were five and ten years old at the time and they nearly lost their daddy.

For the last twenty years, I read every diet book and heart healthy diet book on the market. We tried several different diets and gained weight with each one. We tried the 1000 calorie diet, Weight Watchers, American Heart Association Diet, and Dear Ornish's Reversing Heart Disease Diet. Each diet failed for a variety of reasons. Calories need to be restriced: eat low fat, high carbohydrate meals they all said. We were hungry all the time. We fell off the diet wagon and felt ashamed.

Experts wrote fat is what makes you fat, so we ate low fat everything: low fat bread, low fat meats, low fat cake, low fat cookies, low fat ice cream, low fat desserts plus nine servings of high carb grain foods a day.The FDA food pyramid promised to make us healthy. It didn't. Nothing seemed to work. Repeated failure made it easy to loose heart and let our weight get out of control. We had lost confidence in experts and stopped dieting.

Researchers now have a few clues on what really makes us fat. Overweight people may have trouble processing the heavy doses of sugar and carbohydrates in modern diets. Differences in insulin metabolism may explain why some children and adults are less able to process sugary foods than others. People in industrialized society such as the United States consume more highly processed low fiber meals, more sugary foods, more convenience foods and people are more sedentary. Our collective weight problem is the deadly result.

Insulin resistance is a metabolic condition where glucose can not pass through the cell wall, the cells do not get the nutrition they need to survive, surplus sugar builds up in the blood and is secreted in the urine, then organs are damaged. Insulin resistance leads to Type 2 diabetes. The earlier we diagnose insulin resistance or pre-diabetes and adjust our life styles, the sooner we prevent full blown diabetes.

Our modern food industry has developed a wide array of highly processed foods, ready to eat in minutes. Food producers stripped the fiber out of flour to give consumers the white bread they prefer. Corn Syrup and sugar in all its variations is now often the first ingredient in processed foods. Fried potatoes are the most common side dish in fast food restaurants. Over time, consuming these high carbohydrate foods increases stress on the pancreas, forcing it to over produce insulin. Over time, the body struggles to generate adequate insulin to process those sugars and Type 2 Diabetes is the result.

New strategies for improved weight loss.

A 2005 experiment tested whether insulin sensitivity was a factor in weight loss. Insulin sensitivity has to do with how well the cells are able to absorb the sugars into the cell walls. They tested the effectiveness of two diets, low fat - high carbohydrate versus low fat - low carbohydrate diets, to see whether insulin sensitivity was a factor in weight loss. Their experiment tested 40 obese women, half of whom were insulin resistant and half who were insulin sensitive. Their findings were reported on the web site Obesity Research on Insulin Sensitivity and Obese Women.

Their results were amazing. All participants reduced caloric intake by 400 calories a day. Those people who process insulin normally, lost twice as much weight while eating a low-fat, high carbohydrate diet compared to those eating the low carbohydrate diet.

Insulin resistant dieters, those who are pre-diabetic, lost twice as many pounds eating a low-carbohydrate diet compared to a insulin resistant dieters eating a low-fat diet.

If you are pre-dabetic, eating a low carbohydrate diet will help you loose weight and keep it off. Becoming a low-carb chef is the way to keep eating low carb for a lifetime and never feeling deprived. Eating low carb is a lifestyle change, not a temporary diet to try for a while and stop once you reach your weight loss goal. Learning to be a Low-carb chef will help you make this diet a permanent lifestyle change. To make permanent change, you must find a way to keep the foods interesting. Boredom is the enemy of the low-carb dieter.
