Carbquik Bake Mix
Muffins and Biscuits are back on the menu for the low-carb camp cook. I've added a few simple recipes to this section to get started. As I test more recipes, this section will grow.

Level One Baking Recipes
Carbquik Biscuits
Level One
Makes 12 - 1 ounce biscuits ( double the recipe if serving more people)
Each 1 ounce biscuit is 2 net carbs
2 cup carbquik biscuit mix
2/3 cup cool water mix
Vegetable cooking spray
Prepare about 25 charcoal bricks in a charcoal starter. Preheat 12 inch dutch oven lit with 16 charcoal briquettes. Measure 2 cups of Carbquik mix into mixing bowl. Be careful to not pack the mix. Slowly add 2/3 cup water to the mix and stir with a fork. Spray pan with vegetable cooking spray. Use a teaspoon and scoop out 6 small balls onto a greased pan.
Place in a preheated dutch oven at 375 degrees for 12 minutes or until tops are golden brown. Serve warm.
Carbquik Cheddar Cheese Biscuits
Level One
Makes 12 - 1 ounce biscuits ( double the recipe if serving more people)
Each 1 ounce biscuit is 2 net carbs
2 cup carbquik biscuit mix
1/2 tsp garlic powder
1/2 tsp salt
1/2 cup sharp cheddar cheese
1 Tbs. Crisco transfat free shortening
2/3 cup cool water mix
Vegetable cooking spray
Prepare 25 charcoal bricks. Preheat 12 inch dutch oven lit with 16 charcoal briquettes. Measure 2 cups of Carbquik mix into mixing bowl. Be careful to not pack the mix. Slowly add 2/3 cup water to the mix and stir with a fork. Spray pan with vegetable cooking spray. Use a teaspoon and scoop out 6 small balls onto a greased pan.
Place in a preheated dutch oven at 375 degrees for 12 minutes or until tops are golden brown. Serve warm.
Carbquik Recipe: Easy Yeast Rolls
Servings: 36
Net Carbs Per Serving: 1g
Total Preparation Time: 30 minutes
Ingredients:
1 cup warm water
2 tablespoons sugar
1 package active dry yeast
3 1/2 cups carbquik
Instructions:
- Dissolve yeast in warm water with sugar, let sit 10 minutes till very bubbly.
- Mix starting with 3 cups carbquik and form a stiff dough; add remaining carbquik as needed.
- Knead with dough hook 7 minutes on low speed. Shape into rolls about 1 ounce and allow to rise 15-20 minutes.
- Bake at 300 degrees 12-15 minutes or until golden brown.

Dry Mix: single batch
1/4 cup wheat bran, or oat bran
1 cup plus 1 Tbs. soy flour
1 tsp. baking powder
1/2 cup granular Splenda
1 1/2 tsp. baking powder |

Dry Mix: larger batch
1 cup wheat bran or oat bran
4 1/4 cups soy flour
4 tsp. baking powder
2 cups granular Splenda
6 tsp. baking powder |
Add these wet ingredients to scant 2 cups of bake mix
1/2 cup Calorie Countdown Milk
1/2 cup club soda
2 large beaten eggs
Vegetable cooking spray
- Flavor as banana nut muffins by adding 1 1/2 tsp banana extract and
1/2 cup chopped nuts, (walnuts or pecans) or
- Add 1 cup shredded zucchini to make zucchini muffins or
- Add 1/2 cup blueberries, craisins , raspberries or strawberries to batter for berry muffins. or
- 3/4 cup yellow corm meal, plus 1 1/2 cups bake mix for corm muffins
(this does contain higher carbs because of the corn meal)
12 silicon muffin cups, or 12 cup muffin tin
Preheat 12 inch dutch oven lit with 16 charcoal briquettes. Set aside to heat the iron. Spray muffin cups or muffin tin with vegetable oil spray. In a small bowl, shred zucchini, and add all ingredients. Stir until totally incorporated. Spoon batter into muffin cups until 2/3 full. Lay the filled silicon muffin cups into a room temperature
12 inch dutch oven. Put eight or nine charcoal briquettes under the oven and lift the lit onto the oven.
Bake for 20 to 25 minutes until tops lightly brown. Remove from oven and test with a broom straw to see if they are done. If the broom straw comes out clean, then allow the muffins to cool for five minutes before eating.
Low Carb Level Two:
Waffles, Muffins, Quick Breads
These recipes use a limited amount of whole wheat flour and portion sizes are controlled. This is an area where we had to become adult and realize that white flour was one of the causes for our weight problem. We recommend you eat whole wheat versions of your favorites and eat small quantities.
Whole Wheat Belgian Waffles
Level Two:
4 eggs, separated
(12 ounces pre-packaged Egg Whites)
½ tsp. vanilla
3 Tbs. melted butter |
1 cup skim milk
1 cup white whole wheat flour
½ tsp. salt
2 - 4 heaping Tbs. Fibersure |
Beat egg yolks until very light. Add vanilla and butter. Combine flour, Fibersure and salt; add with milk to egg mixture. Beat well. Beat egg whites until stiff and fold into batter. Spray Belgian waffle maker with butter flavored Pam. Preheat three minutes on one side and turn over to preheat other side. Use sugar free syrup and fresh berries to top.
All Purpose Baking Mix - Like Bisquick
Level Two or Level Three Bake Mix
Dry Mix: single batch
2 cup white whole wheat flour
1/4 cup Fibersure
¼ cup gluten flour
1/4 tsp. salt
4 tsp. baking powder
1/2 tsp. cream of tartar |
Dry Mix: larger batch
8 cup white whole wheat flour
1 cup gluten flour
1 cup Fibersure
1 tsp salt
5 Tbs. + 1 tsp. baking powder
2 tsp. cream or tartar |
Mix all dry ingredients and sift 2 or 3 times.
Biscuit: Add Wet Ingredients
2 cups Bake Mix
1/3 cup canola oil
2/3 cup Hood fat free or 2 % Calorie Countdown milk
2 Tbs. Splenda
2 Tbs. no trans fat margarine or Butter
Preheat oven to 425 degrees F. Combine all ingredients in a bowl and cut in the butter using two dinner knives to cut through the dough. Roll our dough to ½ inch thickness, cut with 2 inch biscuit cutter. Spray baking sheet with Pam. Bake biscuits for 8-10 minutes or till golden brown. Yield 12-14 biscuits.
Pancakes
2 cups Bake mix
2 Tbs. Splenda
2 Tbs. canola oil
2 eggs, slightly beaten
1 ¼ cup Hood fat free Calorie Countdown milk
Prepare pancakes in 10 inch or 12 inch dutch oven with bottom heat only.
Waffles
2 cups Bake Mix
1 1/3 cups Hood fat free Calorie Countdown milk
2 eggs, slightly beaten
¼ cup canola oil
For pancakes or waffles: Combine all ingredients in a mixing bowl and whisk until smooth. Pour 1/4 cup batter onto a hot griddle or non-stick frying pan. Cook pancakes till bubbles break on surface of pancake, turn and cook till golden. Cook waffle till it stops steaming.
Whole Wheat Corn Bread
Level Three
Combine in mixing bowl:
3/4 cup white whole wheat flour
1 cup yellow cornmeal
1 Tbs. Fibersure
2 tsp. baking powder
1/4 tsp. soda
1 tsp. salt
Combine in 2 cup measuring cup and beat with a fork:
1 cup buttermilk
1/4 cup cooking oil
2 eggs
2 – 4 Tbs. SPLENDA®, Granulated
Optional addition: dice ½ red and green pepper. Dice ½ one onion, Add to batter. Or Add 1 small can drained whole kernel Mexican fiesta corn.
Pour liquid ingredients into dry ingredients and mix with a fork until smooth. Pour into greased 8 inch square baking pan or a 10 inch cast iron fry pan. Bake 20 minutes at 400 degrees.
Chilies are known to have excellent antioxidant properties. They are popular because of their good nutritional properties — very high in vitamins A and C and have few calories (15 calories per quarter cup).
