Salad Dressings
Commercial salad dressings usually contain too much sugar and corn syrup. Before I threw out the old commercial salad dressings, I decided to keep the largest bottles and reuse them for my own dressing. We are still careful about the amount of dressing we use. You might try to put your salad dressing in a small container, then dip your fork into the dressing before you take a bite of salad.

Balsamic Dressing
3/4 cup extra virgin olive oil
½ cup Balsamic vinegar
1 shallot, finely chopped
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
¼ tsp garlic powder
¼ tsp salt
¼ tsp ground pepper
12 packages Splenda
Thousand Island Dressing
1 cup Smart Balance Mayonnaise
1 cup Heinz One Carb Ketchup
1/2 cup Meijers Brand sugar free pickle relish
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
In a medium bowl, whisk together, refrigerate. Makes 2 1/2 cups
French Dressing

1 cup granular Splenda
1 cup Heinz One Carb Ketchup
1 Tbs. Fibersure to start, gradually increase to 1/4 cup (optional)
1 cup extra virgin olive oil (I removed the reference to Flax seed oil to make it easier to find.)
2 cloves garlic, minced
1/2 cup white vinegar
1/2 teaspoon hot pepper sauce (Franks Red Hot sauce)
1 tablespoon celery seed
1/4 teaspoon liquid smoke flavoring
2 tablespoons minced fresh chives In a bowl, combine the ketchup, fibersure, minced garlic, vinegar, hot pepper sauce, liquid smoke and celery seed. Mix well. Set aside for a minimum of 10 minutes to allow flavors to mingle. Stir in the tomatoes and basil. Season to taste with salt and pepper. Makes about 2 1/2 cups.
Italian Dressing Mix
1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon Granular Splenda
2 tablespoons dried oregano
1 teaspoon ground black pepper
1/4 teaspoon dried thyme
1 teaspoon dried basil
1 tablespoon dried parsley
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1/4 teaspoon celery salt
2 tablespoons salt
In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.
To prepare dressing, whisk together 1/4 white vinegar, 2/3 cup olive oil, 2 tablespoons water and 2 tablespoons of the dry mix.
Creamy Italian Dressing
3/4 cup Smart Balance mayonnaise
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1 tablespoon vegetable oil
1 tablespoon water
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
1 teaspoon white sugar
1 clove garlic, chopped
In a small bowl, whisk together the mayonnaise, vinegar, lemon juice, oil, water, Worcestershire sauce, oregano, sugar and garlic until evenly combined. Chill before serving.
Basic Italian Salad Dressing
6 tablespoons olive oil
2 tablespoons white wine vinegar
2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice
2 garlic cloves, chopped
1 teaspoon dried basil, crumbled
1/4 teaspoon dried crushed red pepper
Pinch of dried oregano
Combine all ingredients in small bowl and whisk to blend. Season to taste with salt and pepper.
Makes about 1/2 cup.
Cucumber Ranch Dressing
1 cup Smart Balance mayonnaise
1 cup buttermilk
2 medium cucumber, peeled, seeded, and pureed
2 tablespoons finely chopped green onion tops
2 teaspoons minced parsley
2 teaspoons celery seed
1/4 teaspoon garlic powder or 1/2 to 1 garlic clove, finely minced
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1/4 teaspoon salt
1/4 teaspoon black pepper
Combine all ingredients, mixing well. Place in container with lid and refrigerate for at least 2 hours before using. Makes 2 2/3 cups.
Note: For a quick and easy recipe: Add 1 medium cucumber, peeled, seeded, and pureed, and 1 teaspoon celery seed to 1 cup of commercially prepared ranch dressing.
Green Goddess Dressing
1 to 1 1/4 cups Smart Balance mayonnaise
1/2 cup (4 ounces) fat free or low fat sour cream
1 1/2 tablespoons snipped fresh parsley
1/4 cup minced green onions with tops
2 tablespoons lemon juice or tarragon or wine vinegar
1/2 clove garlic, minced
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1/2 teaspoon salt, optional
Dash ground pepper
In medium bowl, stir together all ingredients until well combined. Cover and chill if not using immediately. Makes about 2 cups.
Blue Cheese Salad Dressing
1/2 cup fat free sour cream
1/2 cup reduced fat mayonnaise, or Smart Balance Mayonnaise
2 scallions, minced
2 to 3 tablespoons lemon juice
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1/2 cup blue cheese, crumbled
Freshly cracked black pepper
Combine sour cream, mayonnaise, scallions and lemon juice in a bowl and mix well. Stir in cheese, cover with plastic wrap and refrigerate for at least 4 hours before serving.
Makes about 1 1/2 cups.
Cucumber Dill Sauce
1/3 cup peeled, seeded finely chopped cucumber
1/3 cup fat free sour cream
1/3 cup fat free plain yogurt
2 tsp chopped fresh dill-weed
1 tsp Dijon mustard
Fresh dill-weed sprigs (Optional)
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
In a bowl, mix together the cucumber, sour cream, yogurt, dill-weed, and mustard. Serve over fish.
Celery Seed Salad Dressing
1 cup reduced-fat mayonnaise or Smart Balance Mayonnaise
1/2 cup Splenda
1/3 cup finely chopped onion
1/3 cup red wine vinegar
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1 tablespoon celery seed
In a small bowl, whisk the mayonnaise, sugar, onion, vinegar and celery seed. Cover and refrigerate until serving.
Celery Seed Dressing
1/2 cup granular Splenda
1 teaspoon celery seed
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon salt
1/4 cup cider vinegar
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1/4 teaspoon dried minced onion
1 cup vegetable oil
In a bowl, combine the first five ingredients. Stir in vinegar and onion. Slowly add oil, whisking constantly until combined. Refrigerate.
Russian Style Creamy Salad Dressing
1 cup Low fat or Smart Balance mayonnaise
1/2 cup low fat sour cream
1/2 cup Heinz 1 Carb ketchup
2 tablespoons grated onion
1/2 teaspoon ground dry mustard
4 drops hot sauce
1 teaspoon Worcestershire sauce
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
2 tablespoons heavy cream
2 tablespoons minced fresh parsley
In a medium bowl, whisk together until smooth. Chill overnight.
Catalina Salad Dressing
1/4 teaspoon pepper
1/4 cup vinegar
1/2 cup Heinz 1 Carb catsup
1/2 teaspoon salt
1 onion, grated
1 Tbs. Fibersure to start, gradually increase to 1/4 cup
1/2 cup granular Splenda
1 cup canola oil
In a medium bowl, whisk together, refrigerate.
