The Low Carb Chef Diet
Is the Low-Carb diet best for everyone?
Until very recently, weight loss diets prescribed a regimen of low fat / high carbohydrate food plans. Extreme versions of low fat diet include the vegetarian "Reversing Heart Disease Diet" designed by cardiologist Dr. Dean Ornish. This diet restricted dietary fat to less than 30% of calories. We attempted to follow this diet for about a year and we both gained about 40 pounds. This diet was a really frustrating experience. We were doing the diet that was supposed to eliminate arterial plaque and fix arteries.Failure to lose weight and control cholesterol contributed to George's need for coronary bypass surgery and five arterial grafts. Frustration with doing what was recommended was frustrating enough to make you not trust doctors and their recommendations.
Most more moderate low fat diets have ratio of carbohydrates, fats, and protein of about 55% carbohydrate, 30% fat, and 15% protein.
The Atkins diet was the first diet that recommended reducing carbohydrates and eating rich saturated fats as the path to lower weight. For years, the low carbohydrate approach to weight loss had fans among the obese and little respect from doctors. Whole web sites have condemned this approach as bad for general health.
Low Carbohydrate/ high saturated fat diets with ratios of 40% carbohydrate, 40% fat, and 20% protein were giving obese dieters greater success, but high consumption of saturated fats made the medical community crazy.
We also tried the original Atkins diet but decided to to quit this plan because Atkins has a significant lack of dietary fiber was causing problems of constipation. We were also concerned about the high levels of saturated fat in red meat. The revised Atkins approach includes more dietary fiber.
My husband and I decided to try the Atkins plan again this summer but decided to use only low fat meats and supplement with high fiber cereal and Fibersure. This was the combination low carb and high fiber made this plan work so well for us. The Level One Recipes are all really low carb and low fat recipes. Level Two simply added additional medium carbohydrate vegetables, whole grain meats, fruit, and legumes. This added the variety to make foods taste even better and the weight loss continued, a bit more slowly, but still continued.
This fall, a colleague at work commented about our weight loss. She asked what approach we were using to lose so much. I told her we were eating lean meat, and low carb vegetables. She said, That sounds like the diet my parents used to lose seventy pounds. Their diet was called "The South Beach Diet." I'd never heard of it so started buying his books to learn what he recommended. This book is a gold mine of flavorful recipes and knowledge about the glycemic index and heart disease. On February 1st of 2008, George had his annual physical and cholesterol checkup. We received the following letter from the doctor.
Dear George,
I’m writing about your lab work, and am extremely pleased that the total cholesterol is 112 which is down from 180. The good cholesterol has increased from 39 to 44. The bad cholesterol has dropped from 111 to 58. The fasting glucose was down to 95 which is where it should be.
This was the best news we could have received and makes cooking low carb our own answer to heart disease. The weight loss is just an added bonus.
